Ingredients

Units Scale

Cake:

  • 1 1/2 cups unsweetened applesauce
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup raisins (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Glaze (Optional):

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish or a bundt pan.
  • Cream the butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs and applesauce: Beat in the eggs one at a time, then mix in the applesauce.
  • Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  • Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in raisins and nuts, if using.
  • Bake: Pour the batter into the prepared pan, spreading it evenly. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the glaze (optional): In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle over the cooled cake.
  • Serve: Slice and enjoy this warm, spiced treat with a cup of coffee or tea.

Notes

  • For a healthier option, swap half the butter for unsweetened applesauce.
  • Add a touch of orange zest for a citrusy twist.
  • Pairs well with whipped cream or a scoop of vanilla ice cream.
