These Banana Blueberry Breakfast Cookies are a perfect grab-and-go morning treat. Ingredients
Wet Ingredients:
1 cup mashed ripe banana (about 2-3 bananas)
1 large egg, lightly beaten
1/3 cup unsweetened applesauce
1/4 cup honey (or maple syrup)
1 teaspoon vanilla extract
Dry Ingredients:
1 1/2 cups rolled oats
1/2 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Add-ins:
1/2 cup fresh blueberries (or thawed frozen blueberries)
(Optional) 1/4 cup chopped walnuts (or pecans)
(Optional) 1/4 cup shredded coconut
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the mashed banana, egg, applesauce, honey, and vanilla extract. Mix until smooth.
- Add the rolled oats, whole wheat flour, baking soda, cinnamon, and salt to the wet ingredients. Stir just until combined.
- Gently fold in the blueberries (and walnuts or coconut if using).
- Drop spoonfuls of batter (about 1–2 tablespoons each) onto the baking sheet and gently flatten them with the back of a spoon.
- Bake for 12–15 minutes or until the edges turn golden.
- Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra chewy cookies, chill the dough in the refrigerator for 10 minutes before baking.
- Use very ripe bananas for the best flavor and natural sweetness.
- These cookies are best enjoyed within 2–3 days when stored in an airtight container.
