Description

These Banana Blueberry Breakfast Cookies are a perfect grab-and-go morning treat. Made with ripe bananas, fresh blueberries, hearty rolled oats, and a touch of honey, these cookies offer a delightful blend of natural sweetness and fiber. They’re quick to whip up and make a healthy alternative to traditional breakfast items.

1 cup mashed ripe banana (about 2-3 bananas)

1 large egg, lightly beaten

1/3 cup unsweetened applesauce

1/4 cup honey (or maple syrup)

1 teaspoon vanilla extract

Dry Ingredients:

1 1/2 cups rolled oats

1/2 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

Add-ins:

1/2 cup fresh blueberries (or thawed frozen blueberries)

(Optional) 1/4 cup chopped walnuts (or pecans)

(Optional) 1/4 cup shredded coconut


Instructions

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the mashed banana, egg, applesauce, honey, and vanilla extract. Mix until smooth.
  • Add the rolled oats, whole wheat flour, baking soda, cinnamon, and salt to the wet ingredients. Stir just until combined.
  • Gently fold in the blueberries (and walnuts or coconut if using).
  • Drop spoonfuls of batter (about 1–2 tablespoons each) onto the baking sheet and gently flatten them with the back of a spoon.
  • Bake for 12–15 minutes or until the edges turn golden.
  • Remove from the oven and allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra chewy cookies, chill the dough in the refrigerator for 10 minutes before baking.
  • Use very ripe bananas for the best flavor and natural sweetness.
  • These cookies are best enjoyed within 2–3 days when stored in an airtight container.
