Instructions
1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
2. In another bowl, combine the egg, milk, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and stir until just combined; some lumps are okay.
4. Heat a lightly greased griddle or frying pan over medium heat.
5. Pour 1/4 cup of batter for each pancake onto the pan.
6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
7. Flip the pancake and cook for another 2 minutes until golden brown.
8. Serve warm with your favorite syrup and toppings.
