Description

This creamy and cheesy hashbrown casserole is a delightful comfort food that surpasses the restaurant favorite. It’s perfect for breakfast, brunch, or as a side dish for any meal.

Ingredients

Units Scale
  • 30 ounces refrigerated shredded hashbrowns (such as Simply Potatoes)
  • 1 can (10.75 ounces) condensed cream of chicken soup
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sour cream
  • 1 small shallot, minced (about 2 tablespoons)
  • 2 1/2 cups shredded cheddar cheese, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C). Grease a 9×11-inch baking dish with non-stick cooking spray.
  2. Prepare Mixture: In a large bowl, combine the melted butter, condensed cream of chicken soup, sour cream, minced shallot, 2 cups of shredded cheddar cheese, salt, and pepper. Mix until well combined.
  3. Add Hashbrowns: Fold the shredded hashbrowns into the mixture, ensuring they are evenly coated.
  4. Assemble Casserole: Transfer the hashbrown mixture into the prepared baking dish, spreading it out evenly. Sprinkle the remaining ½ cup of shredded cheddar cheese over the top.
  5. Bake: Place the dish in the preheated oven and bake for 45 to 60 minutes, or until the casserole is bubbly and the top is golden brown.
  6. Serve: Once done, remove from the oven and let it sit for a few minutes before serving.

Notes

  • Variations: For added flavor, consider mixing in cooked bacon bits, diced ham, or sautéed vegetables like bell peppers and onions.
  • Make-Ahead: This casserole can be assembled a day in advance and stored in the refrigerator. When ready to bake, allow it to sit at room temperature for about 30 minutes before placing it in the oven.
  • Storage: Leftovers can be stored in an airtight container in the refrigerator for up to 5 days. Reheat in the oven or microwave until warmed through.
