Instructions
- Prepare the Potatoes: In a bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Cook the Potatoes: Air fry the seasoned potatoes at 400°F (200°C) for about 20 minutes, shaking the basket halfway through for even cooking. Alternatively, roast them in the oven at the same temperature for 25-30 minutes, flipping halfway.
- Cook the Chicken: While the potatoes are cooking, heat butter in a large skillet over medium-high heat. Add the diced chicken and season with salt, pepper, paprika, ranch seasoning, and onion powder. Cook until the chicken is no longer pink in the center, about 5-7 minutes.
- Add Garlic and Sauce: Add minced garlic to the cooked chicken and sauté for an additional minute. Pour in the barbecue sauce, stirring to coat the chicken evenly.
- Combine with Potatoes: Once the potatoes are cooked and crispy, add them to the skillet with the chicken and stir to combine.
- Add Cheese: Sprinkle shredded mozzarella cheese over the top of the chicken and potato mixture.
- Melt Cheese: Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. If your skillet isn’t oven-safe, cover it with a lid and let it sit on the stove over low heat until the cheese melts.
- Garnish and Serve: Garnish with chopped green onions if desired. Serve hot.
