Description

This BBQ Chicken Potato Skillet is a quick and hearty 30-minute dinner that combines tender chicken, crispy potatoes, melted cheese, and tangy barbecue sauce. Perfect for busy weeknights, this one-pan meal is sure to become a family favorite.

  • 2 boneless, skinless chicken breasts, diced
  • 5 small to medium potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon ranch seasoning
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1/2 cup barbecue sauce
  • 1 cup shredded mozzarella cheese (or your preferred cheese)

 

  • Chopped green onions for garnish (optional)

Instructions

  • Prepare the Potatoes: In a bowl, toss the cubed potatoes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  • Cook the Potatoes: Air fry the seasoned potatoes at 400°F (200°C) for about 20 minutes, shaking the basket halfway through for even cooking. Alternatively, roast them in the oven at the same temperature for 25-30 minutes, flipping halfway.
  • Cook the Chicken: While the potatoes are cooking, heat butter in a large skillet over medium-high heat. Add the diced chicken and season with salt, pepper, paprika, ranch seasoning, and onion powder. Cook until the chicken is no longer pink in the center, about 5-7 minutes.
  • Add Garlic and Sauce: Add minced garlic to the cooked chicken and sauté for an additional minute. Pour in the barbecue sauce, stirring to coat the chicken evenly.
  • Combine with Potatoes: Once the potatoes are cooked and crispy, add them to the skillet with the chicken and stir to combine.
  • Add Cheese: Sprinkle shredded mozzarella cheese over the top of the chicken and potato mixture.
  • Melt Cheese: Place the skillet under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. If your skillet isn’t oven-safe, cover it with a lid and let it sit on the stove over low heat until the cheese melts.

 

  • Garnish and Serve: Garnish with chopped green onions if desired. Serve hot.

  • You can customize this dish by adding vegetables like bell peppers or onions.
  • For a spicier kick, use a spicy barbecue sauce or add red pepper flakes.
