Description

A savory twist on a classic beef cobbler, this dish features well-seasoned ground beef in a tangy, creamy sauce with hints of garlic and Old Bay spice. Topped with a fluffy, cheddar-infused biscuit crust reminiscent of Cheddar Bay biscuits, it’s a comforting, one-dish meal perfect for busy weeknights.

Ingredients

Units Scale
  • For the Beef Filling:

    • 1 lb ground beef
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 1 bell pepper, diced (optional)
    • 1 cup frozen corn, thawed
    • 1 cup diced tomatoes (or tomato sauce)
    • 1 cup beef broth
    • 1/2 cup heavy cream
    • 1 tsp Old Bay seasoning (or your favorite Cheddar Bay spice blend)
    • Salt and pepper, to taste
    • 1 cup shredded cheddar cheese (folded in or sprinkled on top during assembly)

  • For the Biscuit Topping:

    • 1 1/2 cups all-purpose flour
    • 2 tsp baking powder
    • 1/2 tsp salt
    • 1/4 cup cold butter, cubed
    • 3/4 cup milk
    • 1/2 cup shredded cheddar cheese
    • 1 clove garlic, minced
    • 1 tsp dried parsley

Instructions

  • Preheat & Sauté:
Preheat your oven to 400°F (200°C). In a large skillet over medium heat, cook the ground beef until browned; drain excess fat. Add the diced onion, garlic, and bell pepper. Sauté until the vegetables soften.
  • Build the Filling:
Stir in the frozen corn, diced tomatoes (or tomato sauce), beef broth, heavy cream, and Old Bay seasoning. Allow the mixture to simmer for about 5 minutes so the flavors meld. Taste and adjust salt and pepper as needed. (Optional: fold in 1 cup shredded cheddar cheese for extra richness.)
  • Assemble:
Transfer the beef mixture evenly into a greased 9×9-inch baking dish.
  • Prepare the Biscuit Topping:
In a bowl, combine the flour, baking powder, and salt. Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs. Stir in the milk, shredded cheddar cheese, minced garlic, and dried parsley until just combined (avoid overmixing).
  • Top & Bake:
Drop spoonfuls of the biscuit dough evenly over the beef mixture. Bake in the preheated oven for 20–25 minutes, or until the biscuit topping is golden brown and cooked through.

  • Finish & Serve:
Allow the cobbler to rest for a few minutes before serving. Garnish with a sprinkle of chopped fresh parsley if desired.

Notes

  • This hearty cobbler makes a complete meal on its own, but you can serve it with a simple green salad on the side.
  • For a bolder Cheddar Bay flavor, consider brushing the biscuits with melted garlic butter right after baking.

  • Customize with additional veggies such as peas or carrots if you like.
