Description

Cheesy Mashed Potato Puffs are a delicious way to use leftover mashed potatoes! These crispy, golden puffs are filled with gooey cheese and make the perfect side dish, appetizer, or snack. Easy to make and irresistibly tasty!  


Ingredients

– 2 cups mashed potatoes

– 2 large eggs

– 1/2 cup shredded cheddar cheese

– 1/4 cup grated Parmesan cheese

– 1/4 cup chopped green onions

– 1/4 cup all-purpose flour

– 1/2 tsp garlic powder

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1/2 tsp baking powder

– 1 tbsp butter (melted)

– Cooking spray or additional butter for greasing muffin tin


Instructions

1. Preheat oven to 400°F (200°C). Grease a muffin tin with cooking spray or butter.  

2. In a large bowl, combine mashed potatoes, eggs, cheddar cheese, Parmesan cheese, green onions, flour, garlic powder, salt, black pepper, baking powder, and melted butter. Mix until well combined.  

3. Spoon the mixture into the greased muffin tin, filling each cup about 3/4 full.  

4. Bake for 20-25 minutes or until golden brown and crispy on the edges.  

5. Remove from the oven and let cool slightly before removing from the tin.  

6. Serve warm with sour cream or your favorite dipping sauce.  


Notes

– You can substitute cheddar cheese with mozzarella or pepper jack for a different flavor.  

– Add cooked and crumbled bacon for extra richness.  

– These puffs can be made ahead and reheated in the oven or air fryer for a crispy texture.
