Cheesy Pocket Tacos are a fun and delicious twist on traditional tacos. These handheld delights feature seasoned ground beef, gooey melted cheese, and crispy taco shells folded into convenient pockets. Perfect for a quick meal or snack, they’re easy to customize with your favorite toppings!
Ingredients
– 1 lb ground beef
– 1 packet taco seasoning
– 1/2 cup water
– 1 cup shredded cheddar cheese
– 1/2 cup shredded Monterey Jack cheese
– 8 small flour tortillas
– 1/4 cup sour cream (optional)
– 1/4 cup salsa (optional)
– 1/4 cup chopped lettuce (optional)
– 1/4 cup diced tomatoes (optional)
– 1/4 cup sliced black olives (optional)
– 1/4 cup chopped green onions (optional)
– 1 tablespoon vegetable oil (for cooking)
Instructions
1. In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spatula.
2. Drain excess grease, then add taco seasoning and water. Stir well and let simmer for 5 minutes until the mixture thickens.
3. Lay out the flour tortillas and place a spoonful of the beef mixture in the center of each.
4. Sprinkle cheddar and Monterey Jack cheese over the beef.
5. Fold the tortillas into pocket shapes by folding in the sides first, then rolling them up tightly.
6. Heat a skillet over medium heat and add a small amount of vegetable oil.
7. Place the folded tacos seam-side down and cook for 1-2 minutes per side until golden brown and crispy.
8. Remove from the skillet and serve warm with sour cream, salsa, lettuce, tomatoes, olives, or green onions as desired.
Notes
– To make these extra crispy, brush the outside of the tortillas with melted butter before cooking.
– Try using ground turkey or shredded chicken as an alternative protein.
– Add refried beans inside for a heartier filling.
– Serve with guacamole or queso dip for extra flavor!
