For the Cherry Bread:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1 cup maraschino cherries, chopped (reserve 2 tbsp juice)
- 1/2 cup chopped walnuts or pecans (optional)
For the Cherry Glaze:
- 1 cup confectioners’ sugar
- 2–3 tbsp maraschino cherry juice
- 1/2 tsp vanilla extract
Instructions
- Make the Cherry Bread:
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy (about 2 minutes).
- Beat in the eggs one at a time, then mix in the vanilla extract and reserved cherry juice.
- Add the dry ingredients to the wet ingredients alternately with the milk, starting and ending with the dry ingredients. Mix just until combined.
- Fold in the chopped cherries and nuts (if using).
- Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Make the Cherry Glaze:
- In a small bowl, whisk together the confectioners’ sugar, maraschino cherry juice, and vanilla extract until smooth. Adjust the consistency with more sugar or juice as needed.
- Once the bread is completely cooled, drizzle or spread the glaze over the top. Let the glaze set before slicing.
Notes
- For best results, use high-quality maraschino cherries.
- Add a pinch of almond extract to the glaze for an extra depth of flavor.
- Store the bread in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
