Dry Ingredients:
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
For the Cinnamon Topping:
- 1/4 cup granulated sugar
- 2 teaspoons ground cinnamon
Instructions
- Preheat & Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Cream Butter & Sugar: In a large bowl, beat the softened butter with 1 1/2 cups granulated sugar until light and creamy. Mix in the eggs one at a time, then stir in the vanilla extract.
- Mix Batter: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Assemble Bars: Press the cookie dough evenly into the prepared pan.
- Add Topping: In a small bowl, combine 1/4 cup sugar with 2 teaspoons cinnamon. Sprinkle evenly over the dough.
- Bake: Bake for 20–25 minutes or until the edges are lightly golden and a toothpick inserted in the center comes out mostly clean.
- Cool & Cut: Allow the bars to cool completely in the pan before cutting into 24 squares.
Notes
- For extra chewiness, be careful not to overbake. The bars will firm up further as they cool.
- You can adjust the cinnamon-sugar topping to suit your taste—more cinnamon for a spicier kick or additional sugar for extra sweetness.
- These bars store well in an airtight container at room temperature for up to 3 days.
