Description

Crispy, flavorful chicken flautas paired with a delicious homemade salsa and served with tender fideo noodles for a complete and satisfying meal


Ingredients

    • 2 pounds chicken
    • 1 teaspoon Uncle Chris seasoning
    • 1 teaspoon paprika
    • Salt and pepper, to taste
    • 1 teaspoon minced garlic
    • Shredded cheese (your choice)
    • Corn tortillas
    • Oil for frying (medium heat)
  • For the Salsa:
    • 2 serrano peppers (roasted)
    • 1 jalapeño (roasted)
    • 1 onion (roasted)
    • Fresh cilantro (to taste)
    • 46 tomatillos (boiled until soft)
    • 2 calabaza (boiled until soft)
    • Chicken bouillon (to taste)
  • For the Fideo:
    • Fideo noodles
    • Chicken broth (optional, for flavor)
    • Salt and pepper, to taste

Instructions

  • Prepare the Chicken:
    • Season the chicken with Uncle Chris seasoning, paprika, salt, pepper, and minced garlic.
    • Boil the chicken until fully cooked, then shred it into small pieces.
    • Mix the shredded chicken with your choice of shredded cheese.
  • Make the Flautas:
    • Heat oil in a pan over medium heat.
    • Roll the chicken and cheese mixture into corn tortillas.
    • Pan-fry the rolled tortillas until brown and crispy on both sides. Set aside.
  • Make the Salsa:
    • Roast the serrano peppers, jalapeño, and onion.
    • Boil the tomatillos and calabaza until soft.
    • Blend all the roasted and boiled ingredients with cilantro.
    • Season with chicken bouillon and adjust to taste.
  • Prepare the Fideo:
    • Cook the fideo noodles in a pan with a bit of oil, toasting them lightly.
    • Add chicken broth (or water) and simmer until the noodles are soft and fully cooked.
    • Season with salt and pepper to taste.
  • Serve:
    • Serve the crispy chicken flautas with the homemade salsa and fideo on the side for a delicious meal!

Notes

  • For extra flavor, you can add a squeeze of lime to the salsa before blending.
  • If you prefer a spicier salsa, adjust the amount of serrano peppers and jalapeño.
  • You can add more cheese to the flautas for a creamier texture.
