Ingredients
– 2 cups powdered sugar
– 2 tbsp unsalted butter, softened
– 2 tbsp heavy cream
– 1 tsp peppermint extract
– 1/2 tsp vanilla extract
– 1 1/2 cups dark chocolate, chopped
– 1 tbsp coconut oil (or vegetable shortening)
Instructions
– 2 cups powdered sugar
– 2 tbsp unsalted butter, softened

1. In a mixing bowl, beat together powdered sugar, butter, heavy cream, peppermint extract, and vanilla extract until a smooth dough forms.
2. Roll the dough into small balls and flatten them slightly into discs. Place them on a parchment-lined baking sheet.
3. Freeze the discs for about 30 minutes until firm.
4. Melt the dark chocolate and coconut oil in a microwave or double boiler, stirring until smooth.
5. Using a fork, dip each frozen mint patty into the melted chocolate, ensuring it is fully coated.
6. Let the excess chocolate drip off, then place the patties back on the parchment paper.
7. Refrigerate for 15-20 minutes or until the chocolate is set.
