Ingredients
For the Cookie Base:

Instructions
- Preheat & Prepare: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the Cookie Dough: In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually mix in the flour, baking soda, and salt until just combined.

- Fill the Cookies: Once cooled, spoon or pipe a small dollop of the cheesecake filling into the center of each cookie, letting it slightly overflow into the well.
- Coat with Cinnamon-Sugar: In a shallow dish, combine the granulated sugar and ground cinnamon. Lightly press the top and edges of each cookie into the cinnamon-sugar mixture, ensuring a generous coating.
