Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 large eggs, room temperature
- 1/2 cup milk (whole or 2% works best)
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
For the Cinnamon Glaze:
- 1 cup powdered sugar
- 2–3 teaspoons milk
- 1/2 teaspoon ground cinnamon
Instructions
- Preheat & Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
- Combine Wet Ingredients: In another bowl, beat the eggs lightly, then stir in the milk, vegetable oil, and vanilla extract.
- Mix Batter: Pour the wet ingredients into the dry ingredients. Stir until just combined—do not overmix; the batter should be slightly lumpy.
- Bake: Transfer the batter into the prepared loaf pan. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool: Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Glaze: Meanwhile, whisk together the powdered sugar, milk, and cinnamon to form a smooth glaze. Drizzle over the cooled bread.
Notes
- For a richer flavor, try substituting half of the milk with sour cream.
- You can add a handful of chopped nuts or raisins for extra texture.
- This bread is best enjoyed the day it’s baked but will keep in an airtight container for up to 3 days.
