Ingredients
For the Mug Cake:
2 tbsp butter (melted)
6 tbsp almond flour
1 egg
1–2 tbsp Swerve (or preferred sweetener)
1/2 tsp vanilla extract
1/2 tsp baking powder
1/2 tsp cinnamon
For the Frosting:
2 tbsp butter
2 tbsp cream cheese
1 tbsp powdered Swerve (or preferred sweetener)
1/2 tsp vanilla extract
Instructions
- For the Mug Cake:
- Melt 2 tbsp butter in a microwave-safe mug.
- Add almond flour, egg, Swerve, vanilla extract, baking powder, and cinnamon to the mug. Mix until well combined.
- Microwave for 90 seconds, or until the cake is set and springs back when touched.
- For the Frosting:
- In a separate microwave-safe bowl, melt 2 tbsp butter.
- Add cream cheese and microwave for 1 minute to soften.
- Stir in powdered Swerve and vanilla extract until smooth.
- To Serve:
- Spread the frosting over the warm mug cake. Enjoy immediately!
Notes
For a nut-free version, substitute almond flour with coconut flour (use 3 tbsp instead of 6 tbsp).
Adjust the sweetness to your preference by adding more or less Swerve.
