For the Mug Cake:

2 tbsp butter (melted)

6 tbsp almond flour

1 egg

12 tbsp Swerve (or preferred sweetener)

1/2 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp cinnamon

For the Frosting:

2 tbsp butter

2 tbsp cream cheese

1 tbsp powdered Swerve (or preferred sweetener)

1/2 tsp vanilla extract


Instructions

  • For the Mug Cake:
  • Melt 2 tbsp butter in a microwave-safe mug.
  • Add almond flour, egg, Swerve, vanilla extract, baking powder, and cinnamon to the mug. Mix until well combined.
  • Microwave for 90 seconds, or until the cake is set and springs back when touched.
  • For the Frosting:
  • In a separate microwave-safe bowl, melt 2 tbsp butter.
  • Add cream cheese and microwave for 1 minute to soften.
  • Stir in powdered Swerve and vanilla extract until smooth.
  • To Serve:
  • Spread the frosting over the warm mug cake. Enjoy immediately!

Notes

For a nut-free version, substitute almond flour with coconut flour (use 3 tbsp instead of 6 tbsp).

Adjust the sweetness to your preference by adding more or less Swerve.

Top with a sprinkle of cinnamon or crushed nuts for extra flavor and texture.
