- In another bowl, whisk together buttermilk, egg, and hot sauce.
- Dredge each steak strip in the flour mixture, shaking off excess.
- Dip into the buttermilk mixture, allowing excess to drip off.
- Dredge again in the flour mixture, pressing gently to adhere.
- Place coated strips on a wire rack and let them rest for 10 minutes.

- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 325°F (165°C).
- Fry steak fingers in batches, avoiding overcrowding, for 3-5 minutes per side until golden brown.
- Transfer to a paper towel-lined plate to drain.

- Remove all but 1/4 cup of oil from the skillet, leaving any browned bits.
- Over medium heat, whisk in 1/4 cup of flour, cooking for 1 minute.

- Season with salt and freshly ground black pepper to taste.
