Instructions

  • Prepare the Steak Fingers:

    • In a shallow bowl, combine flour, baking powder, baking soda, black pepper, and salt.
    • In another bowl, whisk together buttermilk, egg, and hot sauce.
    • Dredge each steak strip in the flour mixture, shaking off excess.
    • Dip into the buttermilk mixture, allowing excess to drip off.
    • Dredge again in the flour mixture, pressing gently to adhere.
    • Place coated strips on a wire rack and let them rest for 10 minutes.
  • Fry the Steak Fingers:

    • Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 325°F (165°C).
    • Fry steak fingers in batches, avoiding overcrowding, for 3-5 minutes per side until golden brown.
    • Transfer to a paper towel-lined plate to drain.
  • Prepare the Gravy:

    • Remove all but 1/4 cup of oil from the skillet, leaving any browned bits.
    • Over medium heat, whisk in 1/4 cup of flour, cooking for 1 minute.
    • Gradually whisk in milk, stirring constantly until the gravy thickens, about 5 minutes.
    • Season with salt and freshly ground black pepper to taste.
  • Serve:

    • Serve the steak fingers hot with the gravy on the side for dipping.
