  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 tablespoons instant coffee (or espresso powder dissolved in 1 tablespoon warm water for extra intensity)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups all-purpose flour

Instructions

  1. Cream Mixture: In a medium bowl, beat the butter and granulated sugar together until light and fluffy. Stir in the instant coffee (or the dissolved coffee mixture).
  2. Add Wet Ingredients: Beat in the egg and vanilla extract until fully combined.
  3. Mix Dry Ingredients: Gradually add the salt and flour, mixing until a smooth dough forms.
  4. Chill Dough: Divide the dough into two equal discs, wrap each in plastic wrap, and refrigerate for at least 4 hours or overnight (this helps the dough firm up for easier handling).
  5. Prepare & Roll: Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out one disc to about 1/8″ thickness.
  6. Cut & Bake: Cut the dough into your desired shapes using cookie cutters. Place the cookies onto a parchment-lined baking sheet and bake for 10 minutes until the edges begin to turn golden.
  7. Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

  • For an even bolder coffee flavor, ensure the instant coffee is fully dissolved in warm water before adding it to the butter mixture.
  • Chilling the dough is essential for easier rolling and cutting as well as for maintaining cookie shape.
  • Store baked cookies in an airtight container at room temperature for up to 1 week.
