Description

Cornbread Poppers are spicy, cheesy, bite-sized snacks that combine the comforting flavor of cornbread with the kick of jalapeños—perfect for parties, game days, or as a fun appetizer.


Ingredients

  • 1 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 tablespoon sugar (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1 large egg
  • 1/2 cup shredded cheddar cheese
  • 23 fresh jalapeños, finely chopped
  • 1/4 cup cooked and crumbled bacon (optional)
  • Oil for frying

Instructions

  1. In a large bowl, whisk together cornmeal, flour, sugar (if using), baking powder, and salt.
  2. In another bowl, beat the egg and milk together, then add to the dry ingredients.
  3. Stir in the cheddar cheese, chopped jalapeños, and bacon if using, until well combined.
  4. Heat oil in a deep skillet or fryer to 350°F (175°C).
  5. Drop tablespoon-sized portions of the batter into the hot oil and fry until golden brown, about 2–3 minutes per side.
  6. Remove with a slotted spoon and drain on paper towels.
  7. Serve warm with ranch dressing or your favorite dipping sauce.

Notes

  • Use pickled jalapeños for a tangier flavor and less heat.
  • To make it vegetarian, omit the bacon.
  • Bake instead of frying at 375°F (190°C) for 15–18 minutes for a lighter option.
