4 boneless, skinless chicken breasts

Salt and pepper, to taste

3 garlic cloves, minced

1 small onion, thinly sliced

Sauce:

1 cup low-sodium chicken broth

1/2 cup heavy cream

1/4 cup grated Parmesan cheese

1/2 teaspoon Italian seasoning

1 tablespoon olive oil

(Optional) 1 teaspoon lemon juice for brightness

For Serving (Optional):

Cooked angel hair pasta or rice

Fresh chopped parsley, for garnish


Instructions

  • Prepare the Chicken:

    • Season the chicken breasts generously with salt and pepper.
    • In a large skillet, warm the olive oil over medium-high heat. Sear the chicken for 2 minutes on each side until lightly golden (this step helps lock in flavor but can be skipped if short on time).
  • Assemble in the Crockpot:

    • Transfer the chicken to the crockpot.
    • Add the sliced onion and minced garlic evenly over the chicken.
  • Make the Sauce:

    • Pour the chicken broth into the crockpot, then add the heavy cream, grated Parmesan cheese, and Italian seasoning.
    • Stir gently to combine all the ingredients around the chicken. If using, drizzle in the lemon juice.
  • Slow Cook:

    • Cover the crockpot and cook on low for 4 to 6 hours, until the chicken is tender and the flavors meld together.

 

  • Finish and Serve:

    • Once cooked, carefully remove the chicken and slice or shred as desired.
    • Stir the sauce well before serving.
    • Plate the chicken over a bed of angel hair pasta or your choice of side, then drizzle the sauce on top.
