Description

Ingredients

  • 3 large carrots, peeled and shredded
  • 1/2 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup Greek yogurt
  • 2 tablespoons mayonnaise (for extra creaminess; optional)
  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 teaspoon honey
  • Salt and pepper, to taste

 

  • Optional: Fresh mint leaves, chopped (for garnish)

Instructions

  • Prepare the Salad:
    • In a large bowl, combine the julienned apples, shredded carrots, raisins (or dried cranberries), and chopped walnuts.
  • Make the Dressing:
    • In a separate bowl, whisk together Greek yogurt, mayonnaise (if using), orange juice, lemon juice, honey, salt, and pepper until smooth.
  • Combine:
    • Pour the dressing over the salad ingredients and toss gently until evenly coated.

 

  • Chill and Serve:
    • Garnish with fresh mint leaves. For best flavor, chill in the refrigerator for at least 15 minutes before serving.

Notes

  • For a lighter version, omit the mayonnaise and use only Greek yogurt.
  • Adjust the citrus and honey to suit your taste preferences.
