Ingredients
For the Toasted Kataifi:
200g kataifi pastry, gently separated into shreds
1/2 cup unsalted butter, melted
1/2 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
Pinch of salt
For the Chocolate Mixture:
200g high-quality dark chocolate (70% cocoa), chopped
2 tablespoons unsalted butter
1/2 cup finely chopped pistachios (or walnuts)
2 tablespoons honey (optional, for extra sweetness)

Prepare and Toast the Kataifi:
- Preheat your oven to 350°F (175°C).
- In a bowl, toss the kataifi pastry shreds with melted butter, ground cardamom, cinnamon, and a pinch of salt until evenly coated.
- Spread the mixture evenly on a baking sheet and toast in the oven for 10–15 minutes, stirring once halfway through, until the pastry is golden and crisp. Remove and allow to cool.

Make the Chocolate Mixture:
- In a heatproof bowl over simmering water (or using a microwave in short bursts), melt the chopped dark chocolate with 2 tablespoons of butter until smooth.
- Stir in the chopped pistachios and honey (if using) into the melted chocolate.

Combine and Set the Filling:
- Gently fold the toasted kataifi into the chocolate mixture, ensuring the pastry retains its crunch.
- Spread the combined mixture into a lined or greased bar mold or shallow pan, pressing lightly to form an even layer.
- Refrigerate for at least 1 hour or until completely set.

- Once firm, remove from the mold and cut into bars or desired shapes. Serve chilled as a unique chocolate bar or dessert filling.

- For an extra layer of flavor, try drizzling a little rose water over the filling before chilling.
