  • 1 1/2 tsp vanilla extract
  • 1 tbsp milk
For the Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup whipped topping (optional, for a lighter texture)
For the Toppings:
  • Sliced strawberries
  • Blueberries
  • Kiwi, peeled and sliced
  • Pineapple chunks
  • Mandarin oranges
  • Raspberries
  • Any other colorful fruits of choice

Instructions

  • Prepare the Cookie Dough:

    • In a medium bowl, whisk together flour, baking powder, and salt.
    • In a large bowl, beat butter and sugar until light and fluffy.
    • Add the egg, vanilla, and milk, mixing until combined.
    • Gradually add the dry ingredients, mixing until a dough forms.
    • Wrap in plastic and chill for 30 minutes.
  • Shape and Bake:

    • Preheat oven to 350°F (175°C).
    • Roll out the dough to ¼-inch thickness and cut out egg shapes using a cookie cutter or by hand.
    • Place cookies on a lined baking sheet and bake for 8-10 minutes, until edges are lightly golden.
    • Let cool completely before decorating.
  • Make the Frosting:

    • In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
    • Fold in whipped topping (if using) for a fluffier texture.
  • Decorate the Fruit Pizzas:

    • Spread a layer of cream cheese frosting over each cooled cookie.
    • Arrange sliced fruit in decorative Easter egg patterns.
  • Serve & Enjoy:

    • Serve immediately or refrigerate until ready to eat.

Notes

  • For a healthier option, use Greek yogurt instead of cream cheese frosting.
  • Add a drizzle of honey or melted white chocolate for extra sweetness.
  • Best enjoyed the same day to keep the cookies crisp!
