Description

Ingredients

– 1 unbaked 9-inch pie crust (homemade or store-bought)

– 3 large eggs, beaten

– 1 1/2 cups granulated sugar

– 1 tablespoon all-purpose flour

– 1/2 cup unsalted butter, melted and cooled

– 1/2 cup buttermilk, well shaken

– 1 teaspoon vanilla extract

– 1 cup sweetened flaked coconut


Instructions

1. **Preheat Oven**: Preheat your oven to 350°F (175°C).

 

2. **Prepare the Filling**: In a large mixing bowl, combine the beaten eggs, granulated sugar, and all-purpose flour. Mix well until smooth. Add the melted and cooled butter, buttermilk, and vanilla extract, stirring until all ingredients are thoroughly combined. Fold in the sweetened flaked coconut.

 

3. **Assemble the Pie**: Place the unbaked pie crust into a 9-inch pie pan. Pour the coconut filling mixture into the pie crust, spreading it evenly.

 

4. **Bake**: Place the pie in the preheated oven and bake for 45 to 50 minutes, or until the filling is set and the top is lightly golden. A toothpick inserted into the center should come out clean.

 

5. **Cool and Serve**: Remove the pie from the oven and allow it to cool completely on a wire rack. Once cooled, slice and serve. Optional: Top with whipped cream or a dusting of powdered sugar for added sweetness.

– For a less sweet version, you can use unsweetened coconut flakes.
