Instructions
- Cook the Potatoes:
- Place the cubed potatoes in a large pot of salted water. Bring to a boil and simmer for about 10–12 minutes until tender. Drain and let cool.
- Prepare the Dressing:
- In a large bowl, whisk together the French onion dip, sour cream, mayonnaise, garlic powder (if using), apple cider vinegar, salt, and pepper until smooth.
- Combine:
- Add the cooled potatoes, chopped red onion, celery, and fresh parsley to the dressing. Gently toss to combine, ensuring the potatoes are evenly coated.
- Chill & Serve:
- Refrigerate for at least 1 hour to allow the flavors to meld. Stir gently before serving.
