Description

This Fresh & Tangy Marinated Cucumber, Onion, and Tomato Salad is a light, refreshing side dish perfect for summer meals. Crisp cucumbers, juicy tomatoes, and sharp red onions are tossed in a zesty marinade, making it a great complement to grilled meats, sandwiches, or as a standalone snack!


Ingredients

  • 2 large cucumbers, thinly sliced
  • 3 medium tomatoes, chopped (or halved cherry tomatoes)
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh parsley or basil, chopped (optional)
For the Dressing:
  • 1/3 cup apple cider vinegar (or white vinegar)
  • 3 tbsp olive oil
  • 1 tbsp honey (or sugar for a sweeter taste)
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes (optional, for spice)

Instructions

  • Prepare the Vegetables:

    • Slice the cucumbers, tomatoes, and red onion and place them in a large bowl.
    • Add the chopped parsley or basil, if using.
  • Make the Dressing:

    • In a small bowl, whisk together vinegar, olive oil, honey, salt, black pepper, garlic powder, oregano, basil, and red pepper flakes.
  • Combine & Marinate:

    • Pour the dressing over the vegetables and toss until evenly coated.
    • Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for best flavor).
  • Serve & Enjoy:
