For the Cupcakes:
- 1 1/2 cups (190g) all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup (120ml) Grape Crush soda
- 1/4 cup (60ml) buttermilk
- Purple food coloring (optional)
For the Grape Buttercream Frosting:
- 1 cup (230g) unsalted butter, softened
- 3 1/2 cups (440g) powdered sugar
- 1/4 cup (60ml) Grape Crush soda
- 1 tsp vanilla extract
- Purple food coloring (optional)
Instructions
Step 1: Prepare the Cupcakes
- Preheat oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
- Alternate adding the dry ingredients, buttermilk, and Grape Crush soda, mixing until just combined.
- Add purple food coloring if desired for a vibrant look.
- Divide the batter evenly into the cupcake liners, filling each about ⅔ full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
- Let cupcakes cool completely before frosting.
Step 2: Make the Grape Buttercream Frosting
- In a large bowl, beat butter until smooth and creamy.
- Gradually add powdered sugar, mixing until well combined.
- Pour in Grape Crush soda and vanilla extract, then mix until fluffy.
- Add purple food coloring if desired.
Step 3: Frost & Decorate
- Pipe or spread the frosting onto cooled cupcakes.
- Garnish with grape candy, sprinkles, or a drizzle of grape syrup for extra flavor.
Notes
- No buttermilk? Substitute with ½ cup milk + ½ tsp lemon juice (let sit for 5 minutes).
- Make it extra grape-y! Add ½ tsp grape extract for an even stronger flavor.
