Description
These Grasshopper Cheesecake Bars are a rich and creamy blend of chocolate, mint, and cheesecake, layered beautifully over a buttery graham cracker crust. The perfect St. Patrick’s Day dessert or a sweet treat for mint chocolate lovers!

For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup heavy cream
- 1/4 cup mint chocolate chip liqueur (or 1 tsp mint extract)
- Green food coloring (a few drops)
Instructions
1️⃣ Prepare the Crust:
- Preheat oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.
- Press evenly into the bottom of a greased 9×13-inch baking pan.
- Bake for 10 minutes, then let cool.
2️⃣ Make the Cheesecake Filling:
- In a large mixing bowl, beat cream cheese until smooth.
- Add sugar and vanilla extract, mixing well.
- Add eggs one at a time, mixing after each.
- Stir in sour cream and heavy cream until combined.
- Pour half of the batter over the cooled crust and spread evenly.
3️⃣ Color & Layer:
- Add mint chocolate chip liqueur (or mint extract) to the remaining batter.
- Mix in a few drops of green food coloring until light green.
- Gently spread the green batter over the white layer.
4️⃣ Bake the Cheesecake Bars:
- Bake at 325°F (163°C) for 50-60 minutes, or until the center is set.
- Cool completely at room temperature, then refrigerate 4+ hours (or overnight).
5️⃣ Serve & Enjoy:
- Cut into bars and top with chocolate shavings or a drizzle of chocolate syrup.
