Description

Ingredients

– 1 pound large shrimp, peeled and deveined

– 2 tablespoons olive oil

– 2 cloves garlic, minced

– 1 teaspoon lemon zest

– 1/2 teaspoon smoked paprika

– Salt and freshly ground black pepper, to taste

– 4 large flour tortillas

– 2 cups romaine lettuce, chopped

– 1/4 cup Parmesan cheese, shaved or grated

– 1/2 cup creamy Caesar dressing

– 1/2 cup croutons, coarsely chopped


Instructions

1. **Marinate the Shrimp**: In a large bowl, combine the shrimp, olive oil, minced garlic, lemon zest, smoked paprika, salt, and pepper. Toss to coat the shrimp evenly. Let the shrimp marinate for about 10-15 minutes.

2. **Grill the Shrimp**: Preheat your grill or grill pan over medium-high heat. Grill the shrimp for 2-3 minutes on each side, or until they are pink and opaque. Remove from the grill and set aside.

3. **Warm the Tortillas**: Place the flour tortillas on the grill for about 10-15 seconds per side until they are lightly charred and warm.

4. **Assemble the Wraps**: Lay out the warmed tortillas on a flat surface. Spread a generous amount of Caesar dressing on each tortilla. Layer with chopped romaine lettuce, grilled shrimp, croutons, and a sprinkle of Parmesan cheese.

5. **Wrap and Serve**: Fold in the sides of the tortillas and then roll up tightly from the bottom to form a wrap. Cut wraps in half diagonally and serve immediately.

 


Notes

– For a lighter version, use whole wheat tortillas and low-fat Caesar dressing.

– Add diced tomatoes or avocado for extra flavor and nutrition.

– To prevent shrimp from sticking to the grill, ensure the grill is well-oiled and preheated before adding the shrimp.

– If using wooden skewers for grilling, soak them in water for at least 30 minutes to prevent burning.
