- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup almond milk (or any plant-based milk)
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the almond milk, honey (or maple syrup), egg, and vanilla extract to the bananas and mix until combined.
- In another bowl, combine the oats, whole wheat flour, baking powder, cinnamon, and salt.
- Fold the dry ingredients into the wet ingredients until just combined.
- Divide the batter evenly into the muffin tin, filling each cup about 3/4 full.
- Bake for 20–25 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For added sweetness, you can mix in some dark chocolate chips or raisins.
- Make these muffins even healthier by adding chopped nuts like walnuts or almonds.
