Description

This Herb & Cheese Quick Bread is a savory, no-yeast bread packed with fresh herbs and gooey cheese. It’s incredibly easy to make and requires no kneading or rising time. Perfect as a side for soups, salads, or enjoyed on its own with a smear of butter.

 


Ingredients

Scale

2 cups (250g) all-purpose flour

1 tbsp baking powder

1 tsp salt

1/2 tsp black pepper

1/4 tsp garlic powder

1/4 cup (60ml) olive oil or melted butter

1 cup (240ml) milk (or buttermilk for extra tang)

1 large egg

1 cup (120g) shredded cheese (cheddar, mozzarella, or a mix)

1/4 cup (15g) fresh herbs (parsley, chives, thyme, or rosemary), finely chopped

Optional: 1/4 cup (25g) grated Parmesan cheese for topping


Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
  3. Combine wet ingredients: In a separate bowl, whisk together the olive oil (or melted butter), milk, and egg until smooth.
  4. Combine everything: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheese and fresh herbs. Do not overmix.
  5. Bake: Pour the batter into the prepared loaf pan. Sprinkle grated Parmesan cheese on top (if using). Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and serve: Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve warm or at room temperature.

Notes

For a richer flavor, use a mix of cheeses like sharp cheddar and Gruyère.

Add-ins like sun-dried tomatoes, caramelized onions, or cooked bacon can elevate the flavor.

Store leftovers in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
