Ingredients
– 2 cups fresh or frozen blueberries
– 1/4 cup maple syrup or granulated sugar
– 2 tablespoons water
– 1 tablespoon fresh lemon juice
– Optional: 1/2 teaspoon vanilla extract
Instructions
1. In a medium saucepan, combine 1 cup of the blueberries, maple syrup (or sugar), water, lemon juice, and vanilla extract (if using).
2. Cook over medium heat for about 10 minutes, stirring occasionally, until the berries start to break down and the mixture thickens.
3. Add the remaining 1 cup of blueberries and continue to cook for an additional 8 minutes, stirring occasionally.
4. Remove from heat. The compote will continue to thicken as it cools.
5. Let it cool to room temperature before serving or refrigerating.
Notes
– For a thicker compote, continue to simmer until the desired consistency is reached.
– This compote can be stored in an airtight container in the refrigerator for up to one week.
– For a sugar-free version, substitute the sweetener with a natural alternative like stevia or monk fruit sweetener.
– To add a spiced flavor, consider incorporating a pinch of cinnamon or cardamom during cooking.
