For the Bread:

  • 3 large eggs

Instructions

  • Activate the Yeast

    • In a small bowl, combine warm water, sugar, and yeast. Stir and let sit for 5-10 minutes, or until it becomes frothy.
  • Make the Dough

    • In a large mixing bowl, combine the flour, ricotta, sugar, milk, eggs, melted butter, vanilla extract, salt, and lemon zest (if using).
    • Add the yeast mixture and stir until the dough starts to come together.
    • Knead the dough on a lightly floured surface for about 10 minutes, or until smooth and elastic.
    • Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Shape the Bread

    • Punch down the dough and divide it into 3 equal pieces.
    • Roll each piece into a long rope, then braid the ropes together to form a loaf.
    • Place the braided dough on a parchment-lined baking sheet.
  • Add the Traditional Eggs (Optional)

    • If desired, carefully place 2-4 dyed Easter eggs into the braid.
  • Let the Dough Rise

    • Cover the loaf with a towel and let it rise for another 30-45 minutes, or until it has doubled in size again.
  • Bake the Bread

    • Preheat the oven to 350°F (175°C).
    • Brush the top of the bread with the beaten egg to give it a golden finish.
    • Bake the bread for 25-30 minutes, or until golden brown and cooked through.
