Scale
- 1 cup peanut butter (or any nut butter)
- 1/2 cup granulated sugar (or brown sugar for a softer texture)
- 1 large egg
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter, sugar, and egg. Stir until smooth and fully incorporated.
- Scoop out small portions of dough (about 1 tablespoon each) and roll them into balls. Place them on the baking sheet, leaving space between each.
- Flatten each cookie slightly using a fork, creating a crisscross pattern.
- Bake for 8–10 minutes, or until the edges are set. The cookies will still be soft but will firm up as they cool.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For a crunchier texture, use crunchy peanut butter.
- For a sweeter cookie, add 1 teaspoon of vanilla extract.
- For extra flavor, mix in chocolate chips or sprinkle with sea salt before baking.
- These cookies are naturally gluten-free and can be made keto-friendly by using a sugar substitute.
- Store in an airtight container for up to 1 week or freeze for longer storage.
