Description

These Lemon Cheesecake Crescent Rolls feature a flaky, buttery crescent roll shell filled with a tangy, creamy lemon cheesecake filling and topped with a sweet citrus glaze. Perfect for spring brunch, dessert, or a delightful snack!

Ingredients

• For the Crescent Rolls:

– 1 can (8 oz) refrigerated crescent roll dough (Pillsbury or equivalent)

– 4 oz cream cheese, softened

– 1/4 cup granulated sugar

– 1 tablespoon lemon juice

– 1 teaspoon lemon zest

– 1/2 teaspoon vanilla extract

– 1 tablespoon melted butter (for brushing)

• For the Glaze:

– 1/3 to 1/2 cup powdered sugar (adjust for desired consistency)

– 1 tablespoon lemon juice (plus extra if needed)

Instructions

1. Preheat Oven:

– Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Prepare the Filling:

– In a medium bowl, beat the softened cream cheese, granulated sugar, lemon juice, lemon zest, and vanilla extract until smooth and well combined.

3. Assemble the Rolls:

– Unroll the crescent roll dough and separate into triangles.

– Spoon about 1 to 1.5 tablespoons of the lemon cheesecake filling onto the wider end of each triangle.

– Roll each triangle tightly from the wide end toward the tip, ensuring you pinch the seams closed.

4. Bake:

– Place the filled rolls on the prepared baking sheet, spacing them about 2 inches apart.

– Brush the tops with melted butter.

– Bake for 10-12 minutes, or until the rolls are golden brown.

5. Glaze and Serve:

– While the rolls are baking, whisk together the powdered sugar and lemon juice in a small bowl until smooth.

– Allow the rolls to cool slightly on a wire rack, then drizzle the glaze over them.

– Serve warm.

Notes

• For an extra lemony kick, add a little extra lemon zest or a drop of lemon extract.

• If you prefer a thicker filling, chill the cream cheese mixture for 5 minutes before filling the dough.

• Leftovers should be stored in an airtight container in the refrigerator and reheated briefly in the oven or microwave.

• This recipe is versatile—serve for breakfast, dessert, or as a sweet snack.
