For the Cupcakes:
- 1 cup (125g) all-purpose flour
- 1/2 cup (50g) cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) milk
- 1/4 cup (60ml) hot water or coffee
For the Chocolate Frosting:
- 1/2 cup (115g) unsalted butter, softened
- 1 3/4 cups (220g) powdered sugar
- 1/4 cup (25g) cocoa powder
- 2 tablespoons (30ml) milk
- 1 teaspoon vanilla extract
For Decoration:
- 8–10 Malteser Bunnies
- 1/2 cup crushed Maltesers
- Whole Maltesers (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a cupcake tin with liners.
- In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, mix melted butter, sugar, eggs, and vanilla until smooth.
- Gradually mix in the dry ingredients, alternating with milk. Stir in hot water or coffee until the batter is smooth.
- Divide the batter evenly into the cupcake liners, filling each about ¾ full.
- Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- Prepare the frosting: Beat butter until creamy, then gradually add powdered sugar and cocoa powder. Add milk and vanilla, beating until smooth.
- Decorate: Pipe or spread frosting on the cupcakes. Sprinkle with crushed Maltesers and place a Malteser Bunny on top of each cupcake.
- Serve and enjoy!
Notes
- Store cupcakes in an airtight container for up to 3 days.
- For extra crunch, mix some crushed Maltesers into the frosting.
- Substitute Malteser Bunnies with regular Maltesers if unavailable.
