Description

Malteser Bunny Cupcakes are rich chocolate cupcakes topped with creamy chocolate frosting, crushed Maltesers, and a Malteser Bunny for decoration. These adorable treats are perfect for Easter or any chocolate lover’s delight!

For the Cupcakes:

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (50g) cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) milk
  • 1/4 cup (60ml) hot water or coffee

For the Chocolate Frosting:

  • 1/2 cup (115g) unsalted butter, softened
  • 1 3/4 cups (220g) powdered sugar
  • 1/4 cup (25g) cocoa powder
  • 2 tablespoons (30ml) milk
  • 1 teaspoon vanilla extract

For Decoration:

  • 810 Malteser Bunnies
  • 1/2 cup crushed Maltesers
  • Whole Maltesers (optional)

Instructions

  • Preheat oven to 350°F (175°C). Line a cupcake tin with liners.
  • In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, mix melted butter, sugar, eggs, and vanilla until smooth.
  • Gradually mix in the dry ingredients, alternating with milk. Stir in hot water or coffee until the batter is smooth.
  • Divide the batter evenly into the cupcake liners, filling each about ¾ full.
  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
  • Prepare the frosting: Beat butter until creamy, then gradually add powdered sugar and cocoa powder. Add milk and vanilla, beating until smooth.
  • Decorate: Pipe or spread frosting on the cupcakes. Sprinkle with crushed Maltesers and place a Malteser Bunny on top of each cupcake.
  • Serve and enjoy!

Notes

  • Store cupcakes in an airtight container for up to 3 days.
  • For extra crunch, mix some crushed Maltesers into the frosting.
  • Substitute Malteser Bunnies with regular Maltesers if unavailable.
