Description

These mint chocolate chip cookies offer a refreshing twist on the classic chocolate chip cookie. With a hint of peppermint and a burst of minty flavor, they’re perfectly balanced with rich chocolate chips for a festive, cool treat.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • Optional: A few drops of green food coloring

 

  • 1 to 1 1/2 cups chocolate chips (semi-sweet or mint chocolate chips)

Instructions

  • Preheat & Prepare:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Mix Dry Ingredients:
    • In a bowl, whisk together the flour, baking soda, and salt.
  • Cream Butter & Sugars:
    • In a large bowl, beat the softened butter with the granulated and brown sugars until light and fluffy (about 2–3 minutes).
  • Combine Wet Ingredients:
    • Beat in the egg, vanilla extract, peppermint extract, and green food coloring (if using) until well combined.
  • Form the Dough:
    • Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Fold in the chocolate chips.
  • Scoop and Bake:
    • Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake for 8–10 minutes until the edges are set but the centers still appear soft.

 

  • Cool and Enjoy:
    • Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For an even mintier flavor, chill the dough for 30 minutes before baking.
  • Adjust the peppermint extract to taste if you prefer a subtler mint note.

These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
