- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- Optional: A few drops of green food coloring
- 1 to 1 1/2 cups chocolate chips (semi-sweet or mint chocolate chips)
Instructions
- Preheat & Prepare:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- Mix Dry Ingredients:
- In a bowl, whisk together the flour, baking soda, and salt.
- Cream Butter & Sugars:
- In a large bowl, beat the softened butter with the granulated and brown sugars until light and fluffy (about 2–3 minutes).
- Combine Wet Ingredients:
- Beat in the egg, vanilla extract, peppermint extract, and green food coloring (if using) until well combined.
- Form the Dough:
- Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated. Fold in the chocolate chips.
- Scoop and Bake:
- Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8–10 minutes until the edges are set but the centers still appear soft.
- Cool and Enjoy:
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For an even mintier flavor, chill the dough for 30 minutes before baking.
- Adjust the peppermint extract to taste if you prefer a subtler mint note.
