Ingredients

Units Scale

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon pure vanilla extract
  • A pinch of salt

For the Fudge Swirl:

  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons light corn syrup (optional, for extra shine)

Add-ins:

  • 1 cup roughly chopped peanut butter cups

Instructions

  • Make the Ice Cream Base:

    • In a medium saucepan, combine the heavy cream, whole milk, granulated sugar, and a pinch of salt.
    • Warm over medium heat, stirring constantly until the sugar is completely dissolved. Do not let it boil.
    • Remove from heat and stir in the vanilla extract.
    • Chill the mixture thoroughly in the refrigerator for at least 2 hours, or until completely cold.
  • Prepare the Fudge Swirl:

    • In a small saucepan, combine the chocolate chips, heavy cream, unsalted butter, and corn syrup.
    • Warm gently over low heat, stirring continuously until a smooth fudge sauce forms. Remove from heat and let cool to room temperature.
  • Churn the Ice Cream:

    • Pour the chilled ice cream base into your ice cream maker and churn according to the manufacturer’s instructions until a soft-serve consistency is achieved.
    • During the last few minutes of churning, add the chopped peanut butter cups.
  • Assemble & Freeze:

    • Transfer half of the churned ice cream to a freezer-safe container.
    • Drizzle half of the fudge sauce evenly over the ice cream.
    • Add the remaining ice cream and finish with the rest of the fudge sauce.
    • Use a knife or skewer to gently swirl the fudge into the ice cream for a marbled effect.
    • Cover and freeze for at least 4 hours, or until firm.
  • Serve:

    • Scoop into bowls or cones and enjoy the rich, indulgent flavors of your homemade Moose Tracks ice cream.

Notes

  • Ensure the ice cream base is completely chilled before churning for the best texture.
  • The fudge sauce can be adjusted to your desired consistency; if it thickens too much while cooling, gently rewarm before swirling.
  • For extra crunch, consider adding a handful of crushed nuts during the folding stage.
