Description

This No-Bake Gingerbread Biscuit Slice is a quick and easy holiday treat, combining crushed biscuits with warm gingerbread spices and a smooth, spiced glaze. Perfect for festive gatherings or a cozy snack with tea or coffee!

For the Biscuit Slice:
  • 250g ginger biscuits (or digestive biscuits)
  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/3 cup golden syrup or honey
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice (optional)
  • 1 tsp vanilla extract
  • 1/2 cup sweetened condensed milk
For the Spiced Glaze:
  • 1 cup powdered sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 2 tbsp milk or cream
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the Biscuit Mixture:

    • Crush the ginger biscuits into fine crumbs using a food processor or by placing them in a ziplock bag and crushing with a rolling pin.
    • In a saucepan over low heat, melt the butter, brown sugar, and golden syrup. Stir until smooth.
    • Remove from heat and mix in ground ginger, cinnamon, nutmeg, allspice, vanilla, and condensed milk.
  2. Combine and Set:

    • Pour the mixture over the crushed biscuits and stir until well combined.
    • Press the mixture firmly into a lined 8×8-inch (20cm) baking dish using the back of a spoon.
  3. Make the Glaze:

    • In a small bowl, whisk together powdered sugar, cinnamon, ginger, vanilla, and milk until smooth.
    • Pour the glaze over the biscuit slice, spreading evenly.
  4. Chill and Serve:

    • Refrigerate for 2-3 hours or until firm.
    • Slice into squares and enjoy!
