For the Biscuit Base:
- 250g (2 cups) digestive biscuits or graham crackers, crushed
- 1/2 cup (115g) unsalted butter, melted
- 1/4 cup (50g) brown sugar
- 1 tsp vanilla extract
For the Marshmallow Layer:
- 2 cups mini marshmallows (or large marshmallows cut into small pieces)
- 1/2 cup (120ml) sweetened condensed milk
- 1/4 cup (60g) unsalted butter
- 1 tsp vanilla extract
- Optional: A few drops of food coloring for a fun touch
For the Topping (Optional):
- 1/2 cup (90g) chocolate chips (melted)
- 1/4 cup (30g) shredded coconut
- Sprinkles for decoration
Instructions
Step 1: Prepare the Base
- Line an 8×8-inch (20x20cm) square baking pan with parchment paper.
- In a bowl, mix the crushed biscuits, melted butter, brown sugar, and vanilla extract until combined.
- Press the mixture firmly into the pan and refrigerate while making the marshmallow layer.
Step 2: Make the Marshmallow Layer
- In a saucepan over low heat, melt the butter and condensed milk, stirring constantly.
- Add the marshmallows and continue stirring until fully melted and smooth.
- Remove from heat and stir in vanilla extract (and food coloring if using).
- Pour the marshmallow mixture evenly over the biscuit base. Smooth with a spatula.
Step 3: Add Toppings & Set
- Sprinkle with coconut, sprinkles, or drizzle with melted chocolate if desired.
- Refrigerate for 2-3 hours or until firm.
- Slice into squares and enjoy!
Notes
- Make it colorful! Use rainbow marshmallows for a fun twist.
- Add crunch by mixing in chopped nuts or Rice Krispies into the marshmallow layer.
