Description

This Pancake Sausage Casserole is the perfect combination of sweet and savory flavors. Fluffy pancakes and juicy sausage are baked together in a delicious, syrup-infused casserole, making it a great breakfast or brunch option for a crowd.

 


Ingredients

– 2 cups pancake mix

– 1 cup milk

– 2 large eggs

– 1 tsp vanilla extract

– 1 tbsp melted butter

– 8 fully cooked breakfast sausages, sliced

– 1/2 cup maple syrup (plus extra for serving)

– 1/2 tsp cinnamon (optional)


Instructions

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

2. In a large bowl, whisk together pancake mix, milk, eggs, vanilla extract, and melted butter until smooth.

3. Pour half of the batter into the prepared baking dish.

4. Evenly distribute the sliced sausages over the batter.

5. Pour the remaining batter over the sausages.

6. Drizzle with ½ cup of maple syrup and sprinkle with cinnamon if using.

7. Bake for 25–30 minutes or until golden brown and set in the center.

8. Let cool slightly before slicing. Serve with extra maple syrup. Enjoy!

– For extra flavor, use maple-flavored sausages.

– You can swap regular pancake mix for a protein or gluten-free version.

– Serve with fresh fruit or whipped cream for a complete breakfast.
