Ingredients

– 1 cup warm milk

– 1 (1/4 oz or 10g) instant yeast packet

– 1 tablespoon sugar

– 2 cups all-purpose flour

– 7 ounces Parmesan cheese, grated

– Salt and freshly ground black pepper, to taste

– 1 teaspoon dried oregano

– 1 tablespoon fresh thyme leaves

– 1 large egg

– 1/2 cup unsalted butter, melted

Instructions

1. In a small bowl, combine the warm milk, instant yeast, and sugar. Let it sit for about 5 minutes until frothy.

2. In a large mixing bowl, whisk together the flour, grated Parmesan cheese, salt, pepper, oregano, and thyme leaves.

3. In a separate bowl, beat the egg and then mix in the melted butter.

4. Add the yeast mixture and the egg-butter mixture to the dry ingredients. Stir until just combined; do not overmix.

5. Cover the bowl with a clean towel and let the batter rest for 1 hour at room temperature to allow it to rise.

6. Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.

7. Divide the batter evenly among the muffin cups, filling each about ¾ full.

8. Bake for 25–30 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

9. Remove from the oven and let them cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

– For best results, use freshly grated Parmesan cheese.

– These muffins are best enjoyed warm but can be stored in an airtight container for up to 3 days.

– To reheat, warm them in a 300°F (150°C) oven for 5–10 minutes.

– Feel free to add chopped herbs or spices to customize the flavor to your liking.
