For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
For the filling:
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 tsp vanilla extract
For the topping:
- 1 cup semi-sweet chocolate chips
- 2 tbsp unsalted butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of a greased 9×13-inch baking dish to form the crust.
- Bake the crust in the preheated oven for 8 minutes, then remove and let it cool completely.
- For the filling, beat together the peanut butter, powdered sugar, softened butter, and vanilla extract until smooth and creamy. Spread this mixture evenly over the cooled crust.
- In a small saucepan, melt the chocolate chips and butter together over low heat, stirring until smooth.
- Pour the melted chocolate over the peanut butter layer, spreading it evenly.
- Refrigerate the bars for at least 2 hours to allow them to set.
- Once set, cut into squares and serve.
Notes
- For an extra crunch, sprinkle chopped peanuts over the chocolate layer before refrigerating.
- These bars are best served chilled and can be stored in the refrigerator for up to a week.
- If you prefer milk chocolate, feel free to substitute it for the semi-sweet chocolate.
