Description

A hearty twist on the classic Reuben sandwich, this Reuben Bake transforms all your favorite flavors into a comforting, layered casserole. Tender corned beef, tangy sauerkraut, and melty Swiss cheese are combined with a creamy dressing and chunks of rye bread, then baked to perfection. Ideal for family dinners or casual gatherings, this dish delivers all the bold taste of a Reuben in every satisfying bite.

2 cups chopped corned beef (or deli-sliced corned beef, roughly chopped)

2 cups sauerkraut, well-drained

2 cups shredded Swiss cheese

3 cups rye bread, cubed (preferably a day old)

Creamy Mixture:

1 cup Thousand Island dressing (or Russian dressing)

1/2 cup sour cream

2 tablespoons Dijon mustard

Additional Flavorings:

1 small onion, finely chopped

2 garlic cloves, minced

Salt and pepper, to taste

2 tablespoons unsalted butter, melted


Instructions

  • Preheat and Prepare:

    • Preheat your oven to 375°F (190°C).
    • Grease a 9×13-inch baking dish with butter or nonstick spray.
  • Mix the Creamy Layer:

    • In a medium bowl, combine the Thousand Island dressing, sour cream, Dijon mustard, garlic, and chopped onion. Season with salt and pepper. Mix well.
  • Layer the Ingredients:

    • Spread half of the rye bread cubes evenly in the bottom of the baking dish.
    • Evenly layer the chopped corned beef over the bread, followed by the sauerkraut.
    • Drizzle about half of the creamy mixture over the layers.
    • Sprinkle 1 cup of shredded Swiss cheese over the top.
    • Repeat with the remaining rye bread, corned beef, sauerkraut, and creamy mixture.
    • Top with the remaining 1 cup of Swiss cheese and drizzle the melted butter over the entire casserole.
  • Bake:

    • Cover the dish with foil and bake for 25 minutes.
    • Remove the foil and bake an additional 10 minutes or until the cheese is bubbly and slightly golden.

 

  • Serve:

    • Let the bake rest for 5 minutes before serving. Scoop portions onto plates and enjoy the layered, comforting flavors reminiscent of a classic Reuben sandwich.

  • For extra tang, consider adding a few dashes of Worcestershire sauce to the creamy mixture.
