These Rotel Cream Cheese Sausage Balls are a flavorful twist on the classic appetizer. Combining spicy sausage, creamy cheese, and zesty diced tomatoes with green chilies, they’re perfect for parties, brunches, or as a savory snack. Easy to make and always a crowd-pleaser.
Ingredients
– 1 lb (450g) hot breakfast sausage, uncooked
– 1 (8 oz / 227g) package cream cheese, softened
– 1 (10 oz / 283g) can Rotel diced tomatoes and green chilies, drained
– 1½ cups (180g) Bisquick or baking mix
– 2 cups (225g) shredded Mexican cheese blend
Instructions
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a large mixing bowl, combine the uncooked sausage, softened cream cheese, drained Rotel, Bisquick, and shredded Mexican cheese.
3. Mix until all ingredients are well incorporated. You can use your hands or a stand mixer for easier mixing.
4. Using a small cookie scoop or your hands, form the mixture into 1-inch balls and place them on the prepared baking sheet.
5. Bake for 15–20 minutes, or until the sausage is cooked through and the balls are golden brown.
6. Remove from the oven and let them cool slightly before serving.
Notes
– For a milder version, use mild sausage and omit the spicy Rotel.
– These sausage balls can be made ahead and frozen. To freeze, place them in a single layer on a baking sheet, freeze until solid, then transfer to a freezer-safe bag or container. Bake from frozen, adding a few extra minutes to the cooking time.
– Serve with a side of ranch dressing or your favorite dipping sauce for added flavor.
