Description

A hearty and flavorful appetizer or side dish, these slow cooker kielbasa bites combine savory smoked sausage with sweet and tangy barbecue sauce, caramelized onions, and crisp bell peppers. The low-and-slow cooking process melds the flavors for a deliciously satisfying bite.


Ingredients

  • 1 lb kielbasa sausage, cut into 1/2-inch slices
  • 1 large onion, thinly sliced
  • 1 red bell pepper, sliced into strips
  • 1 green bell pepper, sliced into strips
  • 2 cloves garlic, minced
  • 1/2 cup barbecue sauce
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  • Place the sliced onion, red and green bell peppers, and minced garlic in the bottom of your slow cooker.
  • Arrange the kielbasa slices on top of the vegetables.
  • In a small bowl, mix together the barbecue sauce, brown sugar, apple cider vinegar, smoked paprika, salt, and pepper.
  • Pour the sauce evenly over the sausage and vegetables.
  • Cover and cook on low for 3-4 hours (or on high for 2-3 hours) until the flavors meld and the kielbasa is tender.
  • Serve warm as an appetizer or side dish. Garnish with chopped parsley if desired.
