- 1 lb kielbasa sausage, cut into 1/2-inch slices
- 1 large onion, thinly sliced
- 1 red bell pepper, sliced into strips
- 1 green bell pepper, sliced into strips
- 2 cloves garlic, minced
- 1/2 cup barbecue sauce
- 1/4 cup brown sugar
- 2 tablespoons apple cider vinegar
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
Instructions
- Place the sliced onion, red and green bell peppers, and minced garlic in the bottom of your slow cooker.
- Arrange the kielbasa slices on top of the vegetables.
- In a small bowl, mix together the barbecue sauce, brown sugar, apple cider vinegar, smoked paprika, salt, and pepper.
- Pour the sauce evenly over the sausage and vegetables.
- Cover and cook on low for 3-4 hours (or on high for 2-3 hours) until the flavors meld and the kielbasa is tender.
- Serve warm as an appetizer or side dish. Garnish with chopped parsley if desired.
