Ingredients

Units Scale
  • 1 lb ground turkey
  • 1 tablespoon avocado or olive oil
  • 2 cups riced cauliflower (fresh or frozen)
  • 1/2 cup diced bell pepper (red or green)
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (adjust to spice preference)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon tomato paste
  • 1/4 cup chicken broth (or water, as needed)
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro, chopped (optional, for garnish)

Instructions

  • Heat the Oil & Cook the Turkey: In a large skillet, heat avocado oil over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spatula (about 5-7 minutes).
  • Sauté the Veggies: Add onions, bell pepper, and garlic to the skillet. Cook for another 2-3 minutes until veggies are softened.
  • Season the Dish: Stir in chili powder, smoked paprika, cumin, cayenne, salt, and black pepper. Add tomato paste and mix well.
  • Add Cauliflower Rice: Stir in cauliflower rice and chicken broth. Cook for 5 minutes, stirring occasionally, until the cauliflower is tender and absorbs the flavors.
  • Finish & Serve: Remove from heat and stir in lime juice. Garnish with chopped cilantro, if desired. Serve hot and enjoy!

Notes

  • Adjust Spice Level: Add more cayenne pepper or chili powder for extra heat.
  • Meal Prep: This dish stores well in the fridge for up to 3 days, making it great for meal prep.
