Ingredients
For the Cheesecake Mixture:

- 1/2 cup graham cracker crumbs

- 8 oz white chocolate (chips or melting chocolate)

Prepare the Filling:
In a medium bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth. Gently fold in the chopped strawberries and graham cracker crumbs until well combined. Cover and chill the mixture for about 1 hour to firm up. -
Form the Truffles:
Once chilled, use a small cookie scoop or teaspoon to portion the mixture and roll it into small balls (about 1 inch in diameter). Place the balls on a parchment-lined baking sheet and chill for an additional 30 minutes so they hold their shape. -
Coat in White Chocolate:
Melt the white chocolate in a microwave-safe bowl in 20–30 second intervals (stirring between each) or over a double boiler until smooth. Dip each chilled truffle into the melted chocolate, using a fork to lift and let the excess chocolate drip off. Return the coated truffles to the parchment.

Set and Garnish:
Allow the chocolate coating to set completely at room temperature or in the refrigerator. If desired, sprinkle a few extra graham cracker crumbs or drizzle a bit of strawberry sauce on top for added flavor and decoration.
