Description

Ingredients

  • 4 large russet potatoes, scrubbed and diced
  • 2 tbsp olive oil
  • 1 packet (or 2 tbsp) taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/2 cup cooked ground beef or black beans (optional)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare potatoes: In a bowl, toss diced potatoes with olive oil and taco seasoning until evenly coated.
  • Bake for 35-40 minutes, flipping halfway through, until crispy and golden brown.
