- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives (optional)
- 1/2 cup cooked ground beef or black beans (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare potatoes: In a bowl, toss diced potatoes with olive oil and taco seasoning until evenly coated.
- Bake for 35-40 minutes, flipping halfway through, until crispy and golden brown.
