Ingredients
– 1 cup (227g) unsalted butter, softened
– 1 cup (200g) granulated sugar
– 1 large egg
– 1 ½ teaspoons vanilla extract
– 2 ¾ cups (345g) all-purpose flour
– ½ teaspoon baking powder
– ½ teaspoon salt
Instructions
1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
3. Beat in the egg and vanilla extract until well combined.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
6. Divide the dough into two portions, flatten into discs, and wrap in plastic wrap. Chill in the refrigerator for at least 1 hour.
7. On a lightly floured surface, roll out the dough to about ¼-inch thickness. Cut into desired shapes using cookie cutters.
8. Place the cookies onto the prepared baking sheets, spacing them about 2 inches apart.
9. Bake for 8-10 minutes, or until the edges are just beginning to turn golden.
10. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
