Instructions
- In a medium bowl, whisk together the mascarpone, powdered sugar, heavy cream, espresso, and vanilla extract until smooth and well combined.
- Gently fold in the crushed ladyfingers until evenly distributed.
- Cover the mixture and chill in the refrigerator for about 1 hour to firm up.
- Once chilled, use a small cookie scoop or teaspoon to form the mixture into uniform balls (about 1 inch in diameter).
- Melt the semi-sweet chocolate in a microwave-safe bowl in 30-second intervals (stirring in between) or using a double boiler until smooth.
- Dip each truffle into the melted chocolate using a fork, allowing excess chocolate to drip off, then place them on a parchment-lined tray.
- Optionally, dust the truffles lightly with cocoa powder for extra flavor and presentation.
- Chill the truffles again until the chocolate coating is set, about 15 minutes.
